Mexican coastal cooking in a Los Angeles food hall

Holbox is inside Mercado La Paloma at 3655 S. Grand Avenue, suite C9. Its official introduction describes food from Mexico’s coastal regions using ingredients from Southern California and Baja California. Chef Gilbert Cetina opened Holbox in 2017 after cooking with his father at neighboring Chichen Itza.

The restaurant is included in the MICHELIN Guide, but the everyday setting remains a food-hall counter. Knowing that format helps when planning a visit: an order of tacos during regular service is a different outing from a reserved tasting dinner.

02

At the counter, start with the daily menu

Holbox says its menu changes with availability, season and fishing conditions. The September 24, 2026 version includes ceviches, tostadas and aguachiles as well as hot tacos and grilled fish. A Baja fish taco and a mesquite-grilled fish taco show two different preparations within the same section.

Choose the preparation that appeals to you before deciding how much to order. A taco-based meal and a larger fish entrée need different accompaniments. If a particular fish brought you here, check the day’s menu first and ask about availability when ordering.

03

The tasting menu has its own reservation

The tasting-menu page describes eight courses served at the counter on Wednesday and Thursday evenings, booked through Resy. Guests begin together at a set seating time. Confirm the current schedule in the booking system and plan to arrive on time.

Read the restrictions before reserving. The restaurant says this menu cannot accommodate shellfish allergies or vegan and vegetarian diets, among other requests. It also states that it does not serve alcohol or permit BYOB. These conditions may help your group decide whether this format fits the evening.

04

Make the food hall part of the plan

Use the full Mercado La Paloma address when arranging transport. Holbox is one business within the building, so finding the destination is not the same as finding a standalone dining room. The official home page has current hours and contact details.

For a first visit, decide on counter ordering or the tasting menu before building the rest of the day around it. Keep the menu open for current dishes and the reservation page for actual availability. The Roundmoa profile brings the location and official links together.
